Aloo Gobi Masala | ஆலு கோபி மசாலா | Potato Cauliflower Masala

Aloo Gobi Masala is a classic punjabi gravy. This versatile gravy goes well with Indian flat bread varieties as well as rice varieties. There are so many variations for preparing this gravy. I am posting the quickie method using pressure cooker, so that it will be easy for beginners and busy mom's.  

I have already posted bread accompaniments that goes well with bread varieties. Check these Channa Masala, Mushroom Peas Masala, Potato Masala, Capsicum (Bell Peppers) Masala, Sprouts & Veg Kurma, Palak Paneer, Whole Greengram Curry, Aloo Muttar Masala.

Ingredients :-

 Potato    1
 Cauliflower    2 cups
 Green Peas    ½ cup
 Chilli powder   1 tsp  
 Turmeric powder   ¼ tsp
 Corainder powder   1 tsp  
 Cumin powder   ¼ tsp
 Amchur powder   ¼ tsp
 Kasoori Methi 1 tsp
 Bay leaf   1
 Cinnamon  ½ inch
 Oil    1 tbsp 
 Salt to taste

To Grind :-
 Big Onion (Roughly chopped)   1
 Big Tomatoes (Roughly chopped)    2
 Ginger garlic paste   1 tsp 
 Green chillies   3 


 Method :-

1). Wash, peel and cut the potatoes into cubes. Cut cauliflower into florets and blanch it in hot water. Click here to know how to blanch the cauliflower. Make a smooth paste with onions, tomatoes, ginger garlic paste and green chillies.
2).  Heat oil in a pressure cooker, add cumin, bay leaf, cinnamon and hing, saute till you get the aroma. Then add the grounded paste along with required salt and let it cook. 
3). Let the masala cook until the raw smell goes and oil separates. 
4). Add turmeric powder, red chili powder, cumin powder, coriander powder and give it a good stir for 30 seconds.   Then add a cup of water along with chopped vegetables. Adjust water quantity as per your liking gravy consistency.
5). Combine everything together and close the lid.  Let it cook for 1 whistle till the veggies become tender. Open the lid, add the kasoori methi and amchur powder. Don't miss these two, it adds more flavor to the curry. Mix and let it cook for a minute or two and switch off !
 Aloo Gobi Masala is ready. Serve this delicious gravy with chapathi or pulao varieties. I served it with Beetroot Chapathi.

Notes :-

# Green peas is optional, I have added to make the gravy look colorful. 
# Do not leave it in cooker for more whistles. Veggies will become mushy, veggies should cook tender and hold their shape. 
# You can cook the veggies separately and add it to the gravy. But cooking the veggies in the gravy adds more flavor.
