Rice Pakora is an instant and crispy snack, that is perfect for rainy or winter days. It is made from leftover rice, gram flour and handy spices. As pongal festival is nearing, this recipe is a great way to use the left-over rice. I do use leftover rice in other recipes like Spinach Rice, Capsicum Rice, Coriander Rice, Tamarind Rice, Lemon Rice, Coconut Rice, Simple Veg Rice, Carrot Rice, Tomato Rice, Vangi Bath, Curd Rice, Cauliflower Rice, Purple Cabbage Rice.
I had leftover Besi bella bath, so I have used it for making these pakoras. I needed very few ingredients for preparing these pakoras, as besi bella bath is a flavored rice with veggies. Check notes if you are planning to use plain rice. This is a great way to use the leftover rice. So dont worry if you have leftover rice during lunch, you can prepare a fab tiffin using that.
Ingredients :-

Left over rice (I used Besi bella bath) | 1 cup |
Besan(gram) flour | ¼ cup |
Hing | generous pinch |
Oil | for deep frying |
Curry leaves (finely chopped) | 1 sprig |
Coriander leaves (finely chopped) | few |
Salt | to taste |
Method:-

1). If you have stored the rice in the fridge, then bring it to room temperature or sprinkle little water and microwave for a few minutes. Rice will look fresh and soft.
2). In a wide mixing bowl, add the leftover rice and mash it. Then add besan flour, salt, hing, water(if necessary) and make lump-free thick batter. Then add curry leaves, coriander leaves and combine. Mix it for 3-4 minutes till batter becomes little fluffy* and keep it aside.

#* Fluffy batter helps to get crispy pakoras.
# I have used left-over besi bella bath, which had spice and flavor. That was sufficient for pakoras so I did not add anything extra in the batter.
# If using plain rice, add onions, cumin powder, chillies and turmeric powder. Rest you can add any ingredient of your choice.
# Left over Puloa or Biriyani or even noodles can also be used instead of white rice, just remember to remove whole bay leaves, cloves, etc. as they come to mouth while eating.
# The additions of veggies makes it colorful and flavorful. Don't miss to add coriander leaves.
# Make sure the batter is in thick consistency and not free flowing. Sprinkle the water rather than pouring it into the batter to bind the ingredients together.
# Rice must neither be grainy or soggy. It must easily blend with other ingredients.
# The moisture in the rice and the veggies will be enough to bind all the ingredients. So add water accordingly.
# All purpose flour or maida can be substituted instead of Besan flour.
