1). Wash and cut the bitter-guard into two halfs. Trim the head and tail, discard the seeds. Dice the pavakkai to medium size pieces. Soak them in salted water for at least 10 minutes, to reduce the bitterness.
2). Heat oil in a pan, add mustard and let it splutter. Then add urad dal, channa dal and saute till it turns golden color. Add onions along with salt and saute till they turn translucent.
3). Add turmeric powder, chilli powder and mix for a minute. Drain the pavakkai, squeeze excess water and add it to the pan.
4). Cook in low flame, stirring in regular intervals till it is completely cooked. If it sticks to the pan add a bit of oil or sprinkle little water. Finally add grated coconut and amchoor powder. Combine everything together. Done !
Serve it warm along with steamed rice and gravy. I served it with Chow Chow Kootu.
