Palkova | பால் கோவா | Milk Halwa

Palkova is an utterly delicious and mouthwatering Indian sweet, made up of milk, ghee and sugar.  All we need is patience to prepare Palkova, since it  takes hours to get reduced to creamy and thick consistency. 
 
Last week, I had full gallon of milk to finish. My Mom suggested me to make Palkova from the scratch. Though the process is simple, it consumes a lot of time. However the outcome is so delicious that you'll simply forget the time you spent in the kitchen.

Ingredients :-

Milk - 10cups ;
Sugar - 1 - 1/2 cups (as per taste) ;
Ghee - 2tablespoon ;
Method :-
------------- 
1).  Boil milk in a wide mouthed heavy bottomed pan or a non stick vessel. 
2). Once it starts boiling, then lower the heat - something in the middle of Low-med. Stir it once every 10 min to make sure that the milk does not stick to the bottom. 
3). Approximately after 1 1/2 hrs to 2 hrs, we can see the change of color in the milk to slight yellow and will become thicker.
4). This is a point when it becomes mandatory that attention is given and stirring is must on a continuous basis. Otherwise it will stick to the bottom. 
When the milk becomes thicker and sticky, add the sugar and stir for sometime.
5). Add the ghee and stir continuously without any pause to ensure that you get an optimum color.
6). when the consistency looks like you can almost roll a ball with it, remove it from the pan, add ghee, stir it well and serve. 
Note :

If you get raw milk that would be perfect, pasteurized and ultra-pasteurized takes longer to thicken.
