This recipe is dedicated to my aunt Dr.Santhamani Bala. She liked my Oats Oothappam recipe. Hope u like this recipe too Athama :)
Ingredients :-

Instant Oats | 1 cup |
Semolina / White Rava | ½ cup |
Curd / Yogurt | ½ cup |
Water | ½ cup or as required |
Fruit salt(Eno) / baking soda | ¼ tsp |
Salt | to taste |
For Tempering :-
Mustard seeds | ¼ tsp |
Urad dal | ¼ tsp |
Channa dal | ¼ tsp |
Asafoetida | 2 Pinch |
Green chillies | 1 tsp |
Grated carrot | 3 tbsp |
Coriander leaves | 2 tbsp |
Oil | 1 tsp |
Method :-
------------
1). Dry roast oats for 2-3 minutes over medium flame untill you get a nice aroma. Cool it completely then grind it to a fine powder and keep aside. Whisk the curd to smooth and creamy texture. Saute the cashews in ghee and keep it aside.
2). Heat Oil in the same pan, add mustard seeds, when they splutter, add urad dal, channa dal and roast till they become golden color. Then add grated carrots, asafoetida and chillies and saute till the raw smell goes. Add the rava and roast it for 3-4 minutes till everything blends well. Keep aside.
3). In the mixing bowl, mix the powdered oats and salt. Then add the whisked curd, rava mixture (Step2), baking soda and enough water to make a normal idli-batter consistency. Finally add the ghee-fried cashews* and let it sit for 2 minutes.
4). Grease the idli plates with little oil. Gently put the batter on idli plates with a laddle. Steam it for 10-12 minutes or until done. Run a blunt knife around the edges to take the idlis off the mould.
Serve hot with any chutney of your choice. I served it with Tomato thokku & Carrot Chutney !! It was delicious..

* You can either add the cashews in the batter or place it on the idli moulds, before pouring the batter.
# Dry roasting the Oats prevents the sticky texture.
# You can include veggies like capsicum, cabbage, peas etc. of your choice. Saute it before adding semolina and combine well(Step2).
# Sour curd suits best for this recipe.
# You can substitute curd with buttermilk and avoid water. But make sure the batter consistency is thick.
# The batter will be slightly thick in consistency like the normal idly batter, but little sticky.
# Adding Eno Salt or Cooking soda yields fluffy idlis.
# You can substitute Semolina(White Rava) with Broken-wheat Rava (Brown Rava).
