-------------
1.)Heat oil in a pan, add cumin and allow it to splutter.
Then add onions along with salt, fry till onion turns light brown. And add chopped tomatoes and saute till it turns soft.
2). Add Chilli powder, turmeric powder and fry for a minute. Then add the chopped mushrooms and cook covered until the mushroom is fully cooked.
3). Heat a tawa on a medium flame, once it gets hot pour a ladle of batter and spread thinly in a circular motion. Drizzle in ghee/oil and use a spatula to smoothen the top. Let this cook for a min so the bottom gets slightly crispy. Cook until you see brown/red patches and turns crisp around the edges.
4). Spread the red chutney on the dosa all over evenly. Place the mushroom filling in the center and fold the dosa.
Remove from the tawa and serve hot with coconut chutney.
Notes :-
-----------
# You can use the left-over filling as side-dish for chappati or as sandwich filling.
# Use ghee for dosa for better taste if you are not calorie conscious.
# No need to turn/remove the dosa from the tawa in between until the dosa is perfectly roasted.
# Serve it directly on to the plate to enjoy the crispiness of the dosa and do not drop them in hot boxes.
