Paneer Tikka ~ Oven, Grill & Stove-top Method | பனீர் டிக்கா

Panner Tikka is delicious and perfect starter for parties.  Juicy chunks of paneer is marinated in masala, arranged on skewers and then grilled with veggies! Even kids will love this snack. Last time when I posted Tandoori chicken recipe, I got so many requests for Grill & Stove-top method. So here I am posting all three methods :- 

Ingredients :-
----------------- 
 Paneer / Cottage Cheese   200 grams
 Bell peppers / Capsicum     Multicolor    
 Butter / Oil (for brushing)  1 - 2 tbsp
 
For the Marinade :-
 Ginger garlic paste   1 tsp
 Turmeric powder   ¼ tsp
 Pepper powder   ½ tsp
 Chilli powder  1 tsp
 Chat masala   ½ tsp
 Garam masala ½ tsp
 Lemon Juice  1 tsp
 Curd ½ cup
 Salt  to taste   

Preparation :-
----------------- 
1). Dice Paneer & capsicum into medium sized squares.
2). Make a paste with all the ingredients mentioned under "for the marinade" in a big bowl.
3). Apply the marinade to Panner in a bowl and veggies in a separate bowl. Make sure panner and veggies are coated well. Cover and keep the marinated paneer and veggies in the refrigerator for 2 hours or more.
4). Skewer the veggies and paneer alternately on skewers or tooth picks.

Grill Method :-

I used table-top grill for this method.  
 
1). Preheat the grill on medium. Arrange the marinated panner-skewers.  
2). Brush oil on the paneer pieces and grill the paneer skewers till light golden.
Serve with mint chutney, onion slices and lemon wedges.

Oven Method :-
---------------------
1). Pre-heat the oven to 200 degrees. Arrange the Paneer-skewers on a baking tray. Brush with oil and keep in the oven for 10 minutes in grill mode.
2). After 10minutes, turn the sides and brush with oil and again grill it for 10 minutes for even cooking.


Remove onto a plate and squeeze some lemon juice over the paneer skewers and serve 


Stove-top Method :-

This is just an alternate method for grill/oven method, it doesn't give firm texture and smoky flavor. But it tastes equally good.

1). Include a tbsp of besan in the marinade for this method. It avoids the paneer from sticking to the pan. 
2). Insert the marinated panner and capsicum into the skewers.
3). Heat a non-stick pan, drizzle butter/oil. Place the paneer-capsicum-skewer on the tawa. Roast and flip them till the paneer and veggies are cooked on both sides. 
Serve with mint chutney & lemon wedges!

Notes :-
----------
# Marinate the paneer for at-least 2 hours or overnight in the fridge. Better the marination, more flavor gets infused in the paneer & veggies. 
# Paneer tends to become dry while baking/grilling, so brush the paneer pieces with oil before baking or add oil to the marinade. 
Soak wooden or bamboo skewers in water for half an hour or so before putting them on the grill/oven. It prevents the wood from burning once it meets the hot grill.
# Make sure the paneer pieces are firm enough to insert, else, it will break in between.
# Don't cook the paneer at high temperature, instead cook at a low temperature for more time. 
# Paneer will become rubbery if you over-cook it. 
# Leftover marinade can be used for preparing Paneer tikka Masala (Gravy). I will soon post the recipe for that.
