Ingredients :-

Hakka Noodles | 1 pack |
Veggies (chopped) | 2 cups |
Spring Onion (finely chopped) | 1 |
Bell peppers (colors of ur choice) | 1 cup |
Soya Sauce | 2 tbsp |
Vinegar | 1 tsp |
Chilli sauce | 1 tsp |
Pepper powder | 1 tsp |
Egg | 3 - 4 |
Oil | 2 tbsp |
Salt | to taste |
Method :-

1). Boil water with 1 tbsp of oil. When water is boiling drop the noodles and cook till soft. Pass through a colander and place under cool running water. This will make the noodles to cool down immediately and make them non sticky. Keep aside. Wash and chop the bell peppers.
2). Heat oil in a wok, break the eggs, add salt and pepper. Scramble well till it is fully cooked, keep aside.
3). In the same wok, add oil and saute the veggies in high flame and saute till the raw smell of veggies leave.
4). Add the soy sauce, chilli sauce, vinegar and toss well. Then add the cooked noodles, scrambled eggs and pepper powder, toss well in high-flame till the noodles get mixed with veggies and eggs. Check for salt & spices, adjust accordingly.
Garnish with green onions and serve hot with ketchup !

# Do not over cook(soft) the veggies, it should retain the crunchiness.
# Use veggies of your choice. Just make sure to cut even and the veggies have similar cooking time.
# I have used 3colors of peppers(capsicum) and carrot. Capsicum gets cooked easily, so first saute other veggies and finally add the capsicum.
# Using wok and tossing the veggies in high heat gives the smoky flavor.
