Cabbage Chutney | முட்டைகோஸ் சட்னி



Cabbage Chutney is a great tiffin accompaniment. Most of the people hate this healthy veggie for its odor(check notes). This chutney is a smart way to include this veggie into the diet. It is difficult to identify the veggie in this chutney. 

Cabbage is a superlative vegetable in many respects. It's inexpensive, nutritious and versatile and keeps well whether fresh or preserved. There are lots of health benefits - It is low in fat and high in fiber, ideal for weight loss, helps to detoxify the body, anti-inflammatory and Blood Sugar Regulator.


Ingredients :-

 Cabbage shredded   1 cup 
 Red Chillies   4 
 Tamarind  marble size 
 Curry leaves   few 
 Garlic   3 pods 
 Turmeric powder    ½ tsp 
 Channa dal  1 tbsp
 Urad dal   1 tbsp 
 Cumin  1 tsp
 Mustard   ½ tsp 
 Oil   2 tsp 
 Hing  generous pinch 
 Salt to taste
Method :-

1). Heat oil in a pan and add cumin, when it splutters add urad dal, channa dal and hing. Saute until dal turns golden brown. Add garlic, red chillies, few curry leaves and saute for a minute.  
2). Then add cabbage, salt and turmeric powder, cook until the raw smell goes from cabbage. Allow it to cool and then grind it along with tamarind. 
3). Do the tempering (optional). Heat another tsp of oil, add mustard seeds, when it splutters, add curry leaves and pour it over the cabbage chutney. Serve the delicious cabbage chutney with dosa or idli varieties.

# Many people love cabbage but can not stand the smell. The smell is the result of hydrogen sulfide, a gas that is released when the cabbage has been overcooked.  
# Many do not cook cabbage because of its after cook smell. So I "Googled" and found few remedies for the smell.. Hope this helps.. (a) put a piece of bread on top or (b) add a tsp of vinegar to the pot it will get rid of the odor while cooking or (c) put a cup of vinegar next to the stove while cooking the cabbage..
