Aloo Muttar Masala is a simple and effortless north-indian(Punjabi) gravy that goes well with chapathi and flavored-rice varieties. This is a simple gravy with handy ingredients that does not require much cooking expertise.
This gravy is cooked with different spices in different versions. You can either cook it elaborate or make it very simple, it tastes great both-ways. Check notes* for variations.

This gravy is cooked with different spices in different versions. You can either cook it elaborate or make it very simple, it tastes great both-ways. Check notes* for variations.
Ingredients:-

Method :-

1). Wash and peel the skin of the potato and cut into cubes. Keep aside.
2). Heat oil in a pressure cooker, add cinnamon, cloves, cumin, bayleaf and let it splutter. Then, add onions along with salt and saute till they turn light brown. Add ginger garlic paste and saute till the raw smell goes. Finally, add tomatoes and saute till it turns mushy.
3). Add the coriander powder, chilli powder, cumin powder, garam masala, amchur powder and saute for a minute. Add 2 cups of water and mix well.
4). Then add the cubed potatoes along with green peas and combine everything together. Cover with lid and pressure cook for 2 whistles. Once the pressure releases, stir well.
Serve hot with Indian-breads or flavored rice varieties. I served it with Avocado Paratha.

# Amchur powder gives a tangy flavor. If you don't have it, substitute it with lemon juice.

# You can also use cashew paste/fresh cream towards the end of the cooking process to make the gravy rich.
#You can also use fresh/dried peas. If using dried green peas soak it for at-least 4 hours.
