5 minutes - Pav Bhaji | Opos | பாவ் பாஜி


I have followed OPOS(One Pot One Shot) method of cooking. This simple method of cooking takes 5-6 minutes of cooking time in the pressure cooker. But no compromise on quality or taste. Please follow the recipe completely along with the notes, to achieve the same consistency as mine. The below recipe should only be used in 2litre pressure cooker. 

Ingredients :-

 Onions (finely chopped)      1  
 Tomatoes (finely chopped)    2  
 Cauliflower (blanched & finely chopped)  ¼ cup
 Green peas   ¼ cup
 Potato (peeled and finely chopped)    ¼ cup
 Cabbage (finely shredded  ¼ cup
 Carrot (finely chopped)    ¼ cup
 Capsicum (finely chopped)    ¼ cup
 Green chillies   4
 Ginger garlic paste  1 tsp
 Turmeric powder   ¼ tsp
 Chilli powder     ½ tsp
 Coriander powder   ½ tsp
 Cumin powder   ½ tsp
 Pav bhaji masala     ½ tsp 
 Amchur powder    pinch 
 Kasoori methi  ¼ tsp
 Pav brea  as needed
 Butter   2 tbsp
 Coriander leaves  for garnishing  
 Lemon wedges  for garnishing 
 Sugar  ¼ tsp
 Salt  to taste
Method:-
-------------
 

1). Rinse and finely chop all the veggies and keep aside. In a 2 litre pressure cooker, add butter and layer the veggies one by one.

2). Add all the powders on top of the veggies along with ginger garlic paste, sugar and salt. Finally add crushed kasoori methi and close the lid. Cook approximately for 5-6 minutes for 2 whistles. Switch off and release the pressure or let the pressure go by itself.

3). Open the cooker and mash the veggies coarsely/finely using potato masher. Done !

4). Slice the pav bread into two equal halfs. The buns which I used were already cut. Heat butter on a griddle. Open the buns, toast both sides for a minute or till pav is crisp and golden.

Garnish the bhaji with chopped coriander leaves and a dollop of butter. Serve hot with pav accompanied with remaining chopped onion and lemon wedges. Yummilicious!!

 

Notes :-

# I layered it this way - Butter + Onions + green chillies + tomatoes + cabbage + carrot + green peas + potatoes + capsicum + ginger garlic paste + powders (turmeric + coriander + chilli + cumin + amchoor + pav bhaji masala) + kasoori methi + salt + sugar.
# You can use veggies of your choice. Try to use mixed combination but avoid beets to prevent discoloration. 
 # The consistency was perfect, I did not add extra water for bhaji.
# For spicier version, sprinkle pav bhaji masala on top of butter while toasting.
# Pav Bhaji masala can be replaced by garam masala.
#I have replaced pav bread with burger buns.
# It tastes best when it is hot.
