Channa Masala | சன்னா மசாலா

Channa Masala is aromatic spicy gravy that goes well Indian flat bread varieties. It's pretty easy to rustle up, and adds zing to any meal. This is definitely a crowd pleaser as the flavors were well-balanced and rich.

I have already posted bread accompaniments that goes well with Indian flat-bread varieties. Check these Mushroom Peas Masala, Potato Masala, Capsicum (Bell Peppers) Masala, Sprouts & Veg Kurma, Palak Paneer, Whole Greengram Curry, Aloo Muttar Masala.

Ingredients :-
-------------------
 White Channa    1 cup
 Onion  1½
 Big tomatoes   2
 Ginger garlic paste    1 tsp
 Turmeric powder   ¼ tsp
 Chilli powder   1 tsp
 Channa masala powder     1 tsp
Coconut milk* or water  ¾ tsp
 Cumin 1 tsp
 Bay leaf      1
 Coriander leaves    for garnishing
 Oil or Butter      1 tbsp
 Salt to taste

Method :-
--------------
1. Soak channa overnight  (or) in warm water for atleast 5-6 hours. Pressure cook channa with a little salt for 4-5 whistles, channa should be soft. Puree tomatoes in a blender. Finely Chop the onions and keep aside.

 2. Heat oil or butter in a pan, add cumin and bay leaf. Saute till cumin splutters and aroma arises. Then add ginger garlic paste and chopped onions. Mix well and saute.
3. Once the onions turn golden brown, add the tomato puree. Mix it well and saute till raw smell goes from the tomatoes.
4. Then add turmeric powder, chilli powder, channa masala powder and salt. Keep stirring and saute till oil separates. Then add the coconut milk* (checck notes) or water and mix well.
5. Add the cooked channa and let it cook in medium flame for few minutes. Combine everything together so that channa blends well with the gravy. Once it boils briskly, switch off and garnish with coriander leaves.
Serve hot with sliced onion and lemon wedge by the side. This gravy goes well with Poori or Chapati or Pulav .  Enjoy !! In the below picture, I haven't used coconut milk so there is change in the color of the gravy.
Notes :-
----------
# Coconut milk is optional, you can substitute with water(channa cooked water in step1). There is difference in taste and color when adding coconut milk.
# Channa masala powder is available ready-made.
