Ingredients :-

Mango | 1 |
Chia seeds | 3 tbsp |
Coconut Milk | ¾ cup |
Honey (optional) | 1 tsp |
Method:-

1). Stir chia seeds in milk. Let it sit for 5 minutes and stir again until there are no lumps. Cover and let it sit for at-least 30 minutes or refrigerate it over night.
2). De-skin, peel, chop and puree the mangoes in the blender to a smooth consistency. Reserve few chunks of mangoes for garnishing.
3). Before serving, mix chia pudding and honey together.
4). In a serving cup, layer it with pureed mangoes at the bottom. then continue to layer it with chia pudding as shown below. Finally garnish with freshly chopped mango chunks on top.
Enjoy the thick and creamy breakfast pudding !!

#Coconut milk can be replaced with regular milk(full fat or fat free) or any flavored milk.
# Full fat milk gives creamy texture to the pudding and will taste rich.
# Honey can be replaced with maple syrup or any other sweetener. Adjust the sweetness to suit your taste.
# Ripened mangoes suits best for the this recipe.
# Chia pudding can be stored in the refrigerator for up to 3 days in an airtight container.
# You can also combine Chia pudding with mango puree together instead of layering.
