Vegetable Aval Upma | அவல் வெஜ் உப்புமா | Vegetable Poha

Vegetable Aval Upma is a tasty, nutritious and satisfying breakfast/evening snack. Aval which is rich in iron, makes a wonderful & healthy combo with veggies that are rich in vitamins. Cashews and raisins adds richness to this upma. Aval is also called as Poha / Attukulu / Beaten rice / flattened rice / Avalakki. It can be perfect for lunch-box recipe when combined with Raita. 

I was looking for a simple and quick breakfast recipe. My mom suggested me Tomato Aval Upma , I wanted to try something new so tried it with veggies. This  flavorful recipe  was a big hit in my house, the very first time.
 
Ingredients :-

 Aval    1 cup 
 Onions (finely chopped)   1  
 Carrot (grated )  1   
 Green peas     1/2 cup  
 Peanuts  fistful  
 Hing     pinch  
 Red chillies     5 
 Mustard    ¼ tsp
 Urad dal   ¾ tsp
 Channa dal   ¾ tsp
 Oil   1 tbsp
 Curry leaves  few  
 Coriander leaves     few   
 Oil | Ghee 1 tbsp  
 Cashews & Raisins (optional)     handful    
 Salt   to taste    

Method :-

1). Wash Aval (poha) and soak it in water for 5 minutes. Drain it in colander after it becomes soft, let it sit for 10 minutes.
2).  Heat oil in the pan, add mustard. When the mustard seeds begins to splutter add the urad dal, channa dal, curry leaves and fry till dal changes color. Then add the onions and hing, mix well. Saute until it turns translucent.Add the veggies along with salt, mix well and let it cook for 3-5 minutes.
3). Roughly grind peanuts and Red chillies. When the vegetables become tender, add the grounded peanut mixture and combine it well. 

5). Add the Aval to the above contents and stir carefully at low heat, so that the grains are not broken. Add the coriander leaves, just before switching off the stove. 

6). (optional step) Toss cashews and Raisins in ghee and top it on upma. It gives richness and crunchy taste. Serve hot !! Enjoy this colorful & flavorful Upma with Raita !!
Notes :-

# Soaking time totally depends on the type of poha, if it is thin then sprinkling of water is good enough to soften it. But do not leave Poha in water for a longer time, it will become soggy/sticky. 
# Add more oil for seasoning as poha tends to become dry.
# For a healthier version, try adding Red Poha 
# You can include tomatoes while sauteing onions and finally garnish with grated coconut. 
# Add veggies of your choice but do not over-cook the veggies.
# As a final touch, add a splash of lemon juice and serve.  
# I made it spicy and served it with simple raita. Adjust spice levels accordingly and serve with raita / chutney.
