Carrot Chutney | கேரட் சட்னி

Carrot Chutney is a simple, healthy and a great tiffin accompaniment in vibrant color. You can even use it as a spread for sandwich. DH loves Dosa, So I started trying different chutney's to compliment the Dosa. 

Ingredients :-
-------------------
 Carrot (grated)   1 cup
 Grated Coconut  ¼ cup
 Urad dal  1½ tbsp
 Red chillies   5-6
 Tamarind  small gooseberry size 
 Turmeric powder   Pinch
 Oil  1 tsp
 Salt to taste

Method :-

1). Heat a pan with little oil, fry the urad dal and red chillies till it turns golden brown. Then add the turmeric powder and grated carrots. Saute the grated carrots till raw smell disappears (it will shrink in volume).    

2). Transfer the above sauteed items to the mixer and grind it along with coconut, tamarind, salt and water to a smooth chutney. Do the tempering and top it on chutney. 
Enjoy it with Idly or Dosai!
Notes :-

# You can either chop / grate the carrots. But grating helps to cook faster. 
# You can also add shallots/onions to this. Saute the onions till it turns translucent and then add the carrots. 
# Adjust the spice level depending on the sweetness of the carrot.
