Paneer Paratha is a Punjabi Cuisine. Indian bread stuffed with Indian cottage cheese. These parathas will be soft and can be packed for lunch-box or during travel. It tastes delicious and makes a complete meal with just curd and simple pickle.

Method :-

1). Make a smooth dough with wheat flour, salt, oil (1 tsp) and water. Knead it well and keep it covered. Cube the paneer, keep it immersed** in hot water for few minutes and drain. This will make the paneer soft and it will crumble easily. Finely chop the green chillies and coriander leaves. Keep aside.
2). Grate or finely crumble the paneer with your hands. Then add finely chopped green chillies, coriander leaves and amchur powder. Gently mix the ingredients, but do not knead. Keep this filling aside.
3). Knead the dough again and make equal sized balls. Sprinkle some wheat flour on the rolling board and flatten it to medium circle. Then place a tbsp of filling in the center.
4). Bring all the edges together and seal it (as shown in the below picture). Pinch out the extra dough from top.
5). Sprinkle flour again and roll the stuffed paneer balls to medium thick parathas.
6). Heat a pan and drizzle ghee. Then place the rolled paratha and let one side cook. Apply ghee and turn over, let the other side cook. If the paratha has been properly done, it will slightly puff up. Cook till you see brown spots on the paratha and remove.
Yummy Paneer parathas are ready. Serve hot with raita and spicy pickle !

#* I personally prefer ghee for parathas. How ever you can substitute it with oil.
#** Skip the immersing part, if you are using fresh home-made paneer.
# Finely chop the green chillies and coriander leaves otherwise you will have difficulty while rolling the parathas.
# You can also substitute green chillies with red chilli powder.
# I have used corriander leaves in the recipe. Though it is optional, it gives a nice aroma to the parathas.
