Pesarattu | பேசரட்டு

Pesarattu is an Andhra specialty recipe which is is loaded with low-fat protein and fiber. This tasty and nutritious dosa is made with whole-green gram. This dosa does not need fermenting like the regualr dosas. You can immediately use the batter as soon as it is ground. 
Whole green gram is rich in calcium, phosphorous, magnesium, potassium, folate and other B Vitamins. They also contain appreciable amounts of Vitamin C. Also helps in weight control, lowers blood pressure, high fiber and it is  the popular healthy sprout.

Ingredients :-

 Whole green gram    ¾ cup 
 Raw rice   ¼ cup
 Ginger   2" piece  
 Green chilli  4 
 Cumin   1 tsp 
 Salt to taste

Method :-
--------------
1). Wash both rice, whole Green gram and soak in water over night. Drain the soaked water in the morning. Grind it with ginger, green chillies and cumin to a smooth batter. Batter will be fluffy and light, add ½ of salt and mix the batter. Pesarattu can be made immediately. 
2). Heat a dosa pan, Take one ladle full of batter pour it on the center of the pan. Spread it thin like dosa shape.Wait few seconds and sprinkle 1 tsp of oil or ghee on top and around the edges of pesarattu to cook evenly and crispy.  
3). Cover the dosa pan with a lid, and cook till the dosa becomes crisp on the bottom and cooked on the other top. You need not flip the dosa. Once dosa turns golden brown, fold it half and remove it from the pan
Pesarattu is normally served with upma filled inside the dosa and Ginger chutney. Enjoy the tempting dosa hot !
 

Notes :-

# You can also top the pesarattu with finely chopped onions. 
# If serving for kids, remove the green chillies while preparing the batter. 
# Raw rice is added for dosa's crispiness. You can skip it if you want soft pesarattu. 
# For a healthy variation, add a handful of spinach while grinding the batter.
