Peanut Sundal | வேர்க்கடலை சுண்டல் | Verkadalai Sundal

Peanut Sundal | Verkadalai sundal is a healthy guilt free snack.This is a simple snack with least ingredients, yet flavourful ! Sundal is a simple dish, made out of steamed legumes like Chickpeas, Mung Beans, Cowpeas, Peanuts etc. 
A variety of sundals are prepared on each of the nine days. 
I actually prepared this sundal during Navaratri festival. This post was in the draft for a long time almost six months..  I thought of posting this now as it is a quick and perfect winter snack :) You can see other Navaratri treats here -> Navarathiri Recipes
Peanuts are rich in nutrients. Serving a hand full boiled peanut, helps to fight against cardio vascular disease. Try this easy peasy low-fat recipe and enjoy !
Ingredients :-

 Peanuts                  1 cup 
 Grated Coconut  2 tbsp
 Red Chillies   3
 Curry leaves  1 sprig
 Oil  2 tsp
 Mustard  1tsp
 Urad Dal  ½ tsp
 Channa Dal   ½ tsp
 Hing pinch
 Salt to taste
   
Method:-

1). Soak the peanuts in water for about 2hours. Wash and 
pressure cook peanuts for 2-3 whistles with little less than 1/2 cup of water and salt. Drain and keep aside. 
2). Heat oil in a pan, add mustard seeds and allow to splutter. Then add urad dal and channa dal and fry till they turn brown. Add curry leaves, red chili, hing and sauté for 30 seconds.
3). Next toss in the cooked peanuts and stir for a minute. Add the grated coconut and give it a quick mix until well combined. Stir gently for another minute and  transfer to serving bowl.  




Yummy and tasty verkadalai sundal is ready !!

# If possible use freshly grated coconut.
# For variation, you can use chopped ginger or grated raw mango after tempering for extra flavor. I add raw mango at times. Also you can use chilli powder instead of dried red chillies.
# If you are using fresh/raw peanuts,  you need not soak. Just boil and temper it.
# During the Navaratri fast, few avoid turmeric, asafoetida, lentils and mustard seeds. This recipe can be altered to suit the needs of your family.
