1). In a pressure cooker, add broken wheat, condensed milk and whole milk or water. Let it cook in slow flame for 3-4 whistles. Switch off.
2). When the pressure releases, open and mix it with the laddle. Wheat should be fully cooked. Check for sweetness and payasam consistency. Add sugar or milk if needed. Let it shimmer for few minutes in slow flame and switch off !
3). Heat ghee in a pan, roast cashews, sliced almonds and raisins till golden brown. Pour it on Payasam and add cardamom powder. Combine everything together.
Serve warm or chill !! When cooled, the consistency gets thicker. Check notes to adjust the consistency.
Notes :-

# After opening the pressure cooker, if the consistency is too watery, let it be in low flame for few minutes until it reaches the desired consistency.
# If the consistency is too thick, you can add milk or water and adjust the consistency.
# Adding milk to adjust the consistency makes the payasam taste rich where as water doesn't give that richness. So add accordingly.
# You can also use Jaggery or sugar instead of condensed milk.
# Whole Milk or Coconut milk adds flavor and gives richness to the payasam. You can even add water instead.
