Chakka Pradhaman / பலாப்பழ பாயாசம் / Jackfruit Payasam / Jackfruit Kheer is a traditional Kerala payasam famous for its lip-smacking taste. This is a quick and extremely divine payasam. The smell from the payasam will tantalize your taste buds. Try this payasam, you will agree that I am not exaggerating. You can prepare this payasam on auspicious occasions like Navrathiri festival.

Jackfruit | 10 - 12 pieces |
Jaggery | ¾ cup |
Coconut Milk (Thick ) | 1 cup |
Ghee | 1 tbsp |
Grated Coconut (for garnishing) | 1 tbsp |
Method :-

1). Discard the seeds of jackfruit and roughly chop the fruit into pieces. Microwave it with ½ cup of water for 3 minutes or pressure cook with 1 cup water for 1 whistle. When cool, blend the jackfruit until smooth and set aside.
2). Heat ghee in the pan and fry the grated coconut till golden brown and aromatic. Keep it aside for garnishing.
3). In a pan, melt jaggery in ¼ cup of water and filter the impurities and boil for 3 minutes. Then add the jackfruit pulp and stir continuously until the mixture thickens a bit (3-4 minutes).
4). Simmer the flame and slowly add the coconut milk. Keep stirring continuously and cook for couple more minutes. Switch off before it comes to a boil.
Garnish with fried coconut and serve warm / chilled.

# Coat your palms with oil when handling jackfruit as it can be sticky and can stain.
# I just liked it plain with fried coconut, but you can very well use cashews, almonds and raisins for garnishing.
# Original recipe calls for chopped coconut pieces for garnishing but I used grated coconut for garnishing.
# Adjust the jaggery level depending upon the sweetness of the jackfruit.
# Fresh Jackfruit will taste good. But I used canned jackfruit which is equally good.
# Do not let it boil after adding the coconut milk.
# I have heard that Coconut milk can be replaced with fat-milk and it gives the similar taste. But I haven't tried yet.
# I have used canned coconut milk. You can use freshly made coconut milk or coconut milk powder.
