Vegetable Sevai | வெஜ் சேவை

Vegetable sevai is  a healthy and filling breakfast/dinner recipe. Sevai/Rice Noodles is a popular South-Indian tiffin variety.  There are many versions in preparing sevai, which include tomato, lemon, coconut, and Curd. Check this link for Tomato Sevai recipe, which I have already posted.
 

Ingredients :-

 Instant Sevai / Idiyappam   2 cups 
 Onion(finely chopped) 1
 Mixed Veggies(finely chopped) 2 cups 
 Sambar powder     ½ tsp
 Turmeric powder   ¼ tsp
 Asafoetida   pinch
 Curry leaves   1 sprig 
 Mustard   ¼ tsp
 Urad dal   ½ tsp
 Channa dal    ½ tsp
 Ghee / Oil   1 tbsp
 Lemon Juice   few drops  
 Salt  to taste
Method :-
-------------
 

1). Heat water in a deep pan and switch off when it boils. Then add the sevai and keep it covered for 3-5 minutes till rice sevai is tender. Drain the water and set it aside. (or) Prepare rice sevai as per the instructions on the pack.    
2). Heat ghee/ oil in a pan and add mustard seeds. When they splutter, add urad dal, channa dal, asafoetida and curry leaves. Saute till the dal turns brown and then add the onions. Saute till turns translucent. 
3). Add the veggies and cook covered till they are done. Then add salt, turmeric powder, sambar powder and saute for 2 minutes.  Add the cooked sevai and and combine everything together and finally top it with lemon juice.  
Garnish with chopped coriander leaves and serve hot with pickle / Coconut chutney !
Notes :-

# Instant rice sevai has very soft texture. You need not boil it, instead simply immerse it in boiling water.
# Add veggies of your choice, You can also include grated paneer. 
# I have used sambar powder for flavor, its optional. Sambar powder itself has spice so I did not add chillies, so adjust accordingly.
# You can also pre-cook the veggies in a microwave and then add it after sauteing the onions.
