Veg Paniyaram | வெஜ் பணியாரம்

Vegetable Paniyaram is a perfect filling breakfast/dinner recipe. It can be served as an evening snack when accompanied with a spicy chutney. Kids likes this especially for its colorful look ! This veg paniyaram is a great way to make the kids eat veggies. 
I have been getting many requests to post kids friendly recipes so came up with this. Hope your little ones enjoy this veg paniyaram ! You can also check the recipe for Tomato Paniyaram which I have already posted.

Ingredients :-

Idli / Dosa Batter – 1 cup  ;
Veggies - 1 cup (finely chopped) ;
Oil as needed ;
 
Method :-

1). Heat the paniyaram pan and add few drops of oil in each mould. In a low flame, pour the batter in each mould till they are 1/4th full.  

2). Immediately, place a spoon of chopped veggies on top of the batter. Let it cook for 2-3 minutes till you see the edges beginning to change color. 
3). Gently turn the paniyaram in each mould upside down with the help of a skewer and let the other side also cook for 2-3 minutes.     
Once cooked transfer the paniyarams onto a plate and repeat with the rest of the batter. Done ! Serve hot with any spicy chutney!

# For a spicier version, sprinkle idli podi on top of the veggies.    
# You can use left-over Idli/dosa batter for making paniyarams. This is a good way to use the left-over batter.  

# I have used handy veggies(carrot & peas), You can use any vegetables of your choice.
# You can also saute the veggies separately and follow the same procedure. You can also use left-over poriyal(stir-fry) as a filling for this paniyaram.
# Instead of adding the veggies while cooking, you can directly mix the veggies in the batter.  
# Make sure to cook in low flame to get a crispy Paniyaram outside with spongy inside. 
# Do not over-fill the moulds then the batter may run into other moulds and edges will stick together, then it will be very difficult to flip the sides.
