Kovakkai Kuzhambu | கோவக்காய் குழம்பு | Tindora Kuzhambu | Ivygourd Gravy
Ingredients :-

Kovakkai | 10 |
Onions (chopped) | 1 |
Tomatoes (chopped) | 1 |
Red Chillies | 2 |
Garlic | 3 pods |
Curry leaves | few |
Mustard | ¼ tsp |
Fenugreek | ¼ tsp |
Salt | to taste |
To Grind : -
Cumin | 1 tsp |
Pepper corns | ¼ tsp |
Coriander seeds | 1 tsp |
Roasted gram | 1 tbsp |
Channa dal | 1 tsp |
Rice | 1 tsp |
Red Chillies | 5 |
Grated coconut | ¼ cup |
Method:-

1). Wash, cut the tip and tail ends of the kovakkai, chop it lengthwise and set aside. Dry roast all the items listed under "to grind" except coconut. Let it cool and grind it along with grated coconut to a fine paste. Keep aside.
2). Heat oil in a pan, add mustard, fenugreek and let it splutter. Then add garlic, onions, red chillies, curry leaves and saute till onions turn translucent. Then add tomatoes and saute till mushy. Then add Kovakkai and saute for a minute.
3). Add turmeric powder along with little water and mix. Cook covered till kovakkai becomes soft.
4). Once kavakkai is cooked, add the grounded paste along with a cup of water and let it boil. When it starts boiling briskly and reaches desired consistency, switch off !
