Keerai Sambar | கீரை சாம்பார் | Spinach Sambar



Keerai Sambar is a healthy recipe. Keerai is very rich in nutrients and a very good source of iron and potassium. This goes well with rice and tiffin varieties. 

Ingredients :-
------------------- 
Keerai /spinach      1 bunch 
onion      1
Redchillies 3
 

Toor dal      1/2 cup 
Tamarind    Small    
gooseberry sized  
 Sambar powder      1 tsp 
Turmeric      1/4 tsp 
Fenugreek seeds     1/4 tsp
Asafoetida     1/4 tsp
Mustard     1 tsp  
Jeera     1/2 tsp
Oil     1 1/2 tspSalt      As needed      

Method :-

1). Pressure cook toor dal with a pinch of turmeric powder for 2 whistles.  Slightly mash the dal and keep it aside. Extract juice from tamarind and discard the pulp. Clean and roughly chop the keerai along with the stem.

2). Heat oil in a pan, add mustard and cumin. When it splutters, add fenugreek, asafoetida and fry for a minute. Then add red chillies, onions and saute till it turns translucent.

3). Add the tamarind extract with salt, turmeric powder and sambar powder and bring to boil.

4). Add the chopped keerai and mix well. Let it cook in a medium flame. Once the keerai gets cooked, add toor dal along with water and bring it to a boil. Once it reaches thick consistency, switch off ! (It takes about 2 -3 minutes).

Serve hot with steamed rice and Vadagam. Enjoy !

Notes :-
----------- 
# Use any varieties of Keerai for this sambar. But if you are using bitter keerai varieties, increase the quantity of tamarind.
# Keerai sambar requires less tamarind and more dal, as the Keerai sambar consistency should be little bit thicker the usual sambar.

# Shallots suits best for sambar.
