Egg Podimas is the simplest and easiest poriyal that can be prepared in a jiffy. This poriyal goes with rice, tiffin or bread varieties. It also makes an quick lunchbox recipe when mixed steamed rice and ghee.
This is an Indian style of scrambled egg. I am posting the basic recipe now, check the notes for variation.
Ingredients :-

Eggs | 2 |
Onion(finely chopped) | 1 |
Turmeric powder | ½ tsp |
Chilli/Pepper powder | 1 tsp |
Mustard | ½ tsp |
Curry leaves | few |
Urad dal | ¼ tsp |
Channa dal | ¼ tsp |
Grated Coconut(optional) | 1 tsp |
Ghee / Oil | 1 tsp |
Salt | to taste |
Method :-

1). Heat oil in a pan and add mustard seeds. Once it spltters and urad, channa dal and saute till turns golden brown. Then add curry leaves, onions and saute till it turns translucent.
2). Then add salt, turmeric powder, chilli powder and saute for a minute.
3). In a medium flame, break the eggs and keep stirring till the eggs are fully cooked. Finally add the grated coconut and combine well.
Check for salt and adjust accordingly. Switch off ! Serve hot with chapati or rice.
Notes :-

# Use this poriyal as stuffing for chappathi. Apply ghee on one side of chapathi, keep this filling on one corner and roll it. It is a great way to use left-over chapathi as a snack !
# You can also include more veggies to this and make it more filling.But make sure to chop it finely, it helps to blend properly with the egg.
# I personally like shallots for this poriyal than big onion.
# For even scrambling, beat the egg, pepper powder and salt in a seperate bowl. Whisk till everything is blended well and add it to the sauteed onions.
# Add few drops of water/milk while beating the egg in a bowl. The milk helps to keep the eggs soft and creamy.
# You can also include green chillies and reduce the spice-powder level. Avoid using green chillies when serving kids, also use ghee instead of oil.
# You can also include ginger-garlic paste and garam masala powder.
# Adding tomatoes make the poriyal bit mushy, so I normally avoid. But you can include if you like that taste.
