Vengaya Sadham is an effortless South-Indian recipe laced with onions which can be easily put together when in a hurry. This recipe can be prepared with leftover rice too. This variety rice can be packed for lunch box with a simple raita.
Today, I am posting my mom's recipe. You can make variations to this recipe by adding toppings and veggies as per your taste.

Method :-

1). Heat the oil in a pan and add mustard seeds. When it cracks add urad dal and chana dal, saute till the dals turn brown. Then add the chopped onions along with curry leaves.
2). Once the onions turn light brown, add turmeric powder and chilli powder. Saute till the oil separates. Reduce the flame and add the grated coconut. Switch off !
3). Mix the grated coconut with the sauteed ingredients. Then add the cooked rice and combine everything well. Mix gently, making sure not to break the rice.
Voila! Delicious Vengaya Sadham is ready.. Stir in a small knob of butter (optional) and enjoy ! It is perfect as such without any accompaniment. But needed can be served with Cucumber Raita.

# You can substitute big onions with shallots.
# Adding coconut is must, it adds flavor to the rice.
# Gingelly oil adds flavor to the rice. You can also use ghee or cooking oil instead of gingelly oil. If you are calorie conscious, use cooking oil instead of ghee.
# I have used regular rice (sona masoori) for this recipe, you can very well use long-grain rice like basmati.
# Pepper powder or green chillies can be substituted instead of chilli powder. If using, rice will be in white color.
