Bread Omlette

Bread Omlette is the easiest recipe anyone could make. It's one among the popular street food in South-India. Though it is a basic recipe, I want to make sure my space has this simple recipe too.

Ingredients :-

 Bread slices    4 
 Eggs  2 
 Onions (finely chopped)  1 
 Coriander leaves (finely chopped)    few  
 Pepper powder   1 tbsp 
 Turmeric powder   ¼ tsp
 Water   1 tbsp  
 Oil   as needed 
 Butter    a small knob 
 Salt to taste

Method :-

1). Crack the eggs into a mixing bowl and whisk until they turn a pale yellow color and frothy. Add turmeric powder, pepper powder and salt. Whisk together again until it combines well. There should not be any lump of dry spices.   
2). Toast both the sides of the bread using toaster. If you don't have toaster then you can toast the bread slices on pan with butter.

Add the chopped onions and coriander leaves to the egg mixture. Heat the pan on medium heat, add the butter and let it melt. Then pour a ladle full of the egg mixture in the middle and
swirl it around the pan so the egg covers the entire surface. Distribute the mixture evenly around the pan and sprinkle some oil.   
4). Cook on low to medium flame until the sides are cooked and the bottom starts to set or lightly browned. Use a spatula and gently flip the omlette. Press it down lightly with the spatula and cook for a minute on the other side. Don't let it get brown.
Ease around the edge of the omelette with a spatula, then fold it in half. Place the Egg omlette between the toasted bread slices and serve it as such or with tomato ketchup ! 
 
Notes :-

# Don't overcook or allow the egg to turn brown.
# You can use any topping along with onions. Like veggies, shredded chicken, grated cheese. If using grated cheese, sprinkle it over the omelette when it is hot.
# Make sure to cook in medium flame. Pour the egg mixture only after the pan has heated well. 

# Water gives the omelette a fluffy texture. So don't skip. 
# Use chilli powder instead of pepper powder.
