Onion Uthappam | வெங்காய ஊத்தாப்பம் | Vengaya Uthappam

Onion Uthappam is soft, spongy, crispy and topped with caramelized onions. This is one of the popular South-Indian breakfast/tiffin recipe. Though there are so many varieties in uthappam, this is my personal favorite. It is simple, easy to prepare and tastes utterly delicious.

Ingredients :- 
-------------------
 Idli/Dosa Batter(check the link for recipe)    1 cup 
 Onion(finely chopped)  2 
 Oil / Ghee  as needed

Method :-
--------------
1). Heat the dosa pan in medium flame. Once it is hot, Pour a ladle full of batter and spread it to form a circle.
2). Sprinkle the chopped onion generously all over the uthappam. Drizzle a tsp of oil around the uthappam and cook in medium flame. 
3). Once the the base and corners becomes golden brown, flip the uthappam to the other side and cook in low flame. Gently press it with the dosa ladle, which helps onions to get infused in uthappam . Cook till the onions turn golden brown and crisp.    

Serve hot with Tiffin sambar , Coconut chutney or Idli Podi.



 Notes :-
------------

# Do not spread the batter thin like you do for normal dosa. Uthappam should be thick.
# You can also combine onion & green chilli in the batter and prepare uthappam. But its will loose its shape. So, I prefer sprinkling onion over the uthappam, as the onions look and tastes very good this way.
# Onions play a vital role in this recipe so be generous in adding onions.
# Do not dilute the batter as you normally do for preparing dosas. Let the batter be thick, just stir it once. It helps to maintain the soft texture of the uthappam.
# For flavor, sprinkle idli podi or sambar powder on top of onions.
